Fresh-Thick Rice Noodle

house-made with a wider shape and soft texture; even though it's not a popular option in the US due to its complex manufacturing process, fresh-thick noodle is the exclusive option served in Vietnam

IRIDESCENT BEEF: is it safe?

According to the USDA, iridescent roast beef or lunchmeat is safe to eat (USDA, n.d.).

Sliced cooked beef or lunchmeat can have an iridescent color. Meat contains iron, fat, and many other compounds. When light hits a slice of meat, it splits into colors like a rainbow. There are also various pigments in meat compounds which can give it an iridescent or greenish cast when exposed to heat and processing. Iridescent beef isn't spoiled necessarily. Spoiled cooked beef would probably also be slimy or sticky and have an off-odor. Fresh sliced deli meats should be used within 3 to 5 days kept in the refrigerator (40 F or less).
